  I asked the manager what kind of smokers they used. His reply was several different ones. A few minutes later he admitted the brisket was from a company in Memphis. It was sliced incorrectly and therefore very tough and chewy. Why lie to a customer about preparing specialty meats on site when you buy it prepared. Integrity counts in business.
